CAP. 2. INFORMAZIONI GENERALI E CARATTERISTICHE
DESTINAZIONE USO E PARTI COSTRUTTIVE
Il tagliamozzarella nel seguito denominata “macchina”, è progettata per tagliare formaggio, mozzarella, funghi e carote
usando diversi tipi di utensili di taglio.
La macchina è costituita da un motore elettrico inserito in una unica fusione. La fusione è ricoperta da un cofano (corpo
macchina carenato).
Il prodotto alimentare da tagliare viene caricato manualmente
nella tramoggia di carico, posta nella zona superiore della
macchina e sempre manualmente, se necessario, con l’ausilio del pestello viene introdotto verso il cono di taglio. Il pestello è
di materiali plastico adatto per il contatto con prodotti alimentari.
La tramoggia di carico è inserita nel collo della macchina:
Il cono di taglio (che gira all'interno del gruppo portautensili), azionato dal motore elettrico e collegato ad un riduttore ad
ingranaggi a bagno d’olio ad alta densità, taglia e convoglia il prodotto alimentare verso la zona di uscita e scarico, quindi la
macchina risulta essere a scarico automatico
. L’utensile di taglio viene bloccato stabilmente all’albero motore con un apposito
dado.
La macchina ha un taglio a fiocco del prodotto alimentare, consentendo una migliore cottura.
A seconda delle esigenze di funzionamento e di produzione, la macchina può essere costituita con diverse parti opzionali.

- Con il termine manutenzione non deve essere inteso solamente il controllo periodico del normale funzionamento della macchina ma anche l analisi ed il conseguente rimedio di tutte quelle cause che per un motivo qualsiasi lo pongono fuori servizio e assolutamente necessario che per le attività di manutenzione pulizia sostituzione parti e ricerca guasti effettuate dall utilizzatore questo compito sia affidato a personale esperto competente ed autorizzato dal datore di lavoro tutte le operazioni di manutenzione pulizia e sostituzione parti nessuna esclusa devono essere tassativamente eseguite con la macchina completamente ferma ed isolata dalle fonti di alimentazione esterne 11
- Di seguito sono indicati gli interventi per la ricerca guasti o avarie e sblocco elementi mobili che possono essere svolti da manutentori 11

- Rimozione dei ripari e o dispositivi di protezione per alcuni interventi di cui al presente capitolo è necessario rimuovere dalla loro posizione alcuni ripari fissi la rimozione può avvenire solo ad opera del manutentore al termine degli interventi detti ripari devono essere riposti e bloccati nella loro originale posizione con i sistemi di fissaggio che erano previsti prima dell intervento il responsabile della manutenzione deve disattivare completamente la macchina come tra l altro di seguito riportato prima di procedere all asportazione di un riparo fisso e o alla sostituzione di un elemento isolamento dalle fonti di alimentazione esterne prima di eseguire qualsiasi operazione manutenzione pulizia e sostituzione parti si devono sezionare ed isolare le fonti di alimentazione esterne 11
- E vietato pulire a mano gli organi e gli elementi in moto tutti gli interventi di pulizia devono essere messi in atto solo ed esclusivamente dopo aver scaricato la macchina con il prodotto alimentare in lavorazione ed averla isolata dalla fonte di alimentazione elettrica e di energia esterne la macchina l apparecchiatura elettrica ed i componenti a bordo macchina non devono essere mai lavati utilizzando acqua tanto meno in forma di getti di qualunque natura e quantità quindi senza secchio né gomma né spugna non porre mai direttamente la macchina nel lavandino o sotto il rubinetto la classificazione del livello di igiene della macchina e delle attrezzature associate per l uso previsto è 2 due macchina che in seguito a una valutazione del rischio di igiene è conforme ai requisiti delle norme internazionali applicabili ma richiede un disassemblaggio programmato per la pulizia 12

- Für eingriffe in den bereichen außerordentliche wartung infolge von brüchen oder überholungen oder mechanischen bzw elektrischen störungen muss ein eingriffsantrag direkt beim anerkannten kundendienst gestellt werden die anweisungen bezüglich der außerordentlichen wartung sind im vorliegenden bedienungshandbuch nicht enthalten und sind ausdrücklich beim hersteller anzufordern 64

- Запрещено чистить вручную органы и детали в движении все операции по чистке должны выполняться непременно только после выгрузки из машины обрабатываемого пищевого продукта и после изоляции ее от внешних источников электрического питания и энергии машину электрическое оборудование и приборы машины нельзя мыть водой тем более используя струи любого типа и количества следовательно без ведра резины и губки никогда не ставить машину непосредственно в раковину или под кран что касается гигиены машина и соответствующее оборудование классифицированы в отношении предусмотренного использования как уровень 2 два машина в результате оценки гигиенического риска признана отвечающей соответствующим международным требованиям но требует периодической разборки для чистки 77
