3 - Operating instructions

3.1 Preliminary warnings
The appliance is designed for professional use and must be used by
trained personnel.
• The prover must be used for cooking food only. Any other use shall be
considered improper.
3.2 Operation
Mechanical version
SWITCHING ON AND REGULATION: turn the thermostat knob clockwise
and set the temperature required.
The orange light indicates that the equipment is heating.
SWITCHING OFF: turn the knob counter-clockwise, returning the selector
to the initial position identied by the symbol
NEVER clean the inside of the prover or the door glass with jets of
cold water when still at temperatures higher than 70° C.
Digital version
SWITCHING ON AND REGULATION:
• Press the on/o key
• Press the key , the temperature dial starts to ash
• Set the temperature required with the keys and
• Press the key again, the time dial starts to ash
• Set the time with the key and
As soon as the time dial stops ashing the equipment starts operating
automatically
SWITCHING OFF: press the on/o key
Humidication
To avoid drying the product during proving, ll the receptacle at the
bottom of the cupboard with water and adjust the relative temperature
by means of the lower thermostat knob.
