Preparing fermented dough
Ingredients 500 g
Water 190 ml
Dry baker’s yeast 1 tsp
T55 flour 320 g
Salt 1 tsp
Pour the ingredients into the tank in the order indicated. Stop the programme
after 29 minutes and leave to stand for 1 hr at 20°C, then set aside for 24 hr
atC.
Serving tip: fermented dough can be kept for up to 48 hours.
