Il barista, meglio di chiunque altro, conosce in modo preciso il prodotto che

Oggi stiamo vivendo una nuova ed eccitante evoluzione del mondo del
caffè espresso: il consumo di questa bevanda sta crescendo rapidamente sia
per quantità (nuovi mercati) sia per qualità (mercati consolidati). Grazie ad
un’informazione sempre più diffusa i clienti apprezzano ogni giorno di più qualità
e caratteristiche dell’espresso che prima potevano solo intuire. Per soddisfare
questa nuova clientela una nuova generazione di baristi ha cominciato a
controllare tutte le fasi di creazione di un espresso, dalla selezione di miscele
di qualità (alcune tostate direttamente), alla tecnica di realizzazione, al controllo
dei vari processi di erogazione. È proprio all’interno di questa nuova ricerca
qualitativa che Rancilio è intervenuta con Xcelsius. Per offrire al mercato un
contributo determinante e rivoluzionario.

Baristas are more familiar than anyone with the product they use, its characteristics
and, above all, the tastes of their customers. We are currently experiencing a new
and exciting phase in the world of espresso coffee: consumption of this drink
is increasing rapidly, in terms of both quantity (new markets) and quality (established
markets). Thanks to the growing amount of information available, customers are
increasingly appreciating certain aspects and characteristics of espresso coffee that they
could only have guessed at previously. In order to satisfy these new customers, a new
generation of baristas have started to control every stage of the espresso
creation process, from selecting good quality blends (some directly roasted), to
developing coffee-making techniques and controlling the various dispensing processes.
Rancilio has contributed to this search for quality with Xcelsius in order to make a
decisive and revolutionary contribution to the market.
